After working in Europe’s top kitchens such as the Brenners Park Hotel Baden Baden, the Four Seasons in Munich, Le BeauRivage Palace in Lausanne, the Hotel Berkeley in London, the Sofitel in Ajaccio, Le Canard in Hamburg and Le Manoir Aux Quatre Saisons in Oxford, Josef Sauerschell opened 1985 as head chef the luxury Hotel La Residencia in Deia. There he met the Maitre and his future wife, Leonor Payeras. After they succeeded the first turbulent years of a Gourmet restaurant in a, from the culinary point of view very simple Majorca, Sauerschell’s kitchen at the Hotel Residencia was rewarded with a Michelin star. In 1999 the couple decided to become independent and to open their own restaurant.
At the same time, the family planning had already begun, and the pride about the first own restaurant, came with the joy of the birth of twin daughters. After winning numerous awards for the Es Raco d’es Teix and the balancing act between family and personal success, the couplewas finally rewarded 2002 with their own Michelin star. The 3rd daughter completed their private happiness.
